4 Ingredient No-Bake Chocolate Cashew Butter Bars

INGREDIENTS:

  • 2 CUPS PITTED MEDJOOL DATES, ABOUT 16

  • 16 OZ. Salted cashew BUTTER

  • 1/2 CUP Dark CHOCOLATE CHIPS, I like Enjoy Life Foods

  • 2 TSP COCONUT OIL

  • fancy salt, like Maldon, for sprinkling on top

DIRECTIONS:

  1. PULSE DATES IN A FOOD PROCESSOR UNTIL BROKEN UP INTO SMALLER PIECES. ABOUT 20-30 SECONDS.

  2. ADD Cashew BUTTER AND BLEND UNTIL WELL COMBINED. ABOUT 1 MINUTE.

  3. LINE AN 8X8 DISH WITH PARCHMENT PAPER AND SPREAD cashew BUTTER MIXTURE EVENLY. YOU MAY NEED TO LAY ANOTHER PIECE OF PARCHMENT ON TOP AND USE SOME ELBOW GREASE TO SPREAD IT out. PLACE IN THE FREEZER FOR AT LEAST 30 MINUTES.

  4. Add CHOCOLATE CHIPS AND COCONUT OIL to A MICROWAVE SAFE bowl AND MICROWAVE IN 20-30 SECOND INCREMENTS, STIRRING IN BETWEEN, UNTIL COMPLETELY MELTED. ABOUT 3-4 TIMES.

  5. REMOVE Cashew BUTTER MIXTURE FROM FReezer AND POUR CHOCOLATE mixture evenly OVER TOP. SPRINKLE WITH SALT. FREEZE AGAIN FOR AT LEAST 15 MINUTES BEFORE CUTTING INTO squares. ENJOY!
