Pumpkin Chocolate Chip Cashew Butter Freezer Fudge

Ingredients:

  • 3/4 cup pumpkin puree

  • 3/4 cup salted cashew butter

  • 1/4 cup maple syrup/honey/agave

  • 2 tbsp vanilla protein powder or collagen, I like ancient nutrition, could try subbing for unflavored protein powder/collagen & 1/2 tsp vanilla extract

  • 1/3 cup mini chocolate chips, I like Enjoy Life

  • sprinkle of salt

Directions:

  1. Combine all ingredients, aside from salt, in a medium size bowl.

  2. Line a small baking dish (I used a 9X7) with parchment and spread mixture evenly. sprinkle with salt. freeze for at least 4 hour before cutting. store in the freezer (I layer parchment paper between so they don’t stick together!).
