Chocolate Covered Cashew Butter Stuffed Dates

Ingredients:

  • 24 medjool dates

  • 1/2 cup cashew butter, I use Trader Joe’s Salted Cashew Butter

  • 3/4 cup dark chocolate chips, I use Enjoy Life

  • 1 tbsp coconut oil

  • 2 tbsp shredded coconut, optional

  • fancy salt, like Maldon, optional

Directions:

  1. Line a small baking sheet with parchment paper. Slice dates halfway through length wise, remove the pits if needed and place the dates on the prepared baking sheet.

  2. Fill each date with ~1 tsp cashew butter. Place in freezer for 5+ minutes.

  3. While the dates are in the freezer, in a microwave safe bowl, place chocolate chips and coconut oil. Microwave at 30 second increments, stirring in between, until chocolate chips are completely melted (about 3 times!).

  4. Place coconut and salt in 2 small bowls. Using one hand, completely coat dates in chocolate, shaking off excess. Using your other clean hand, immediately sprinkle the date with coconut and salt. Repeat until all dates are coated. Freeze for 10+ minutes and enjoy!
