Coconut Chocolate Chip Cashew Butter Blondies

Coconut Chocolate Chip Cashew Butter Blondies 

INGREDIENTS:

  • 1 cup cashew butter

  • 2/3 cup maple syrup

  • 2 eggs

  • 1 tbsp avocado oil or melted & cooled coconut oil

  • 2 tsp vanilla extract

  • 2 tbsp coconut flour

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup finely shredded coconut, plus more for topping

  • 1/2 cup dark chocolate chips, plus more for topping

DIRECTIONS:

  1. Preheat oven to 350 degrees F and line an 8X8 baking dish with parchment paper.

  2. In a bowl, whisk together the cashew butter, maple syrup, eggs, avocado oil and vanilla. Stir in coconut flour, baking soda and salt (get rid of any coconut flour clumps!). Fold in coconut and chocolate chips.

  3. Add to prepared baking dish and spread out evenly. Top with additional chocolate chips and coconut.

  4. Bake for 30-35 minutes or until a toothpick inserted in the center comes out mostly clean. I’ve found 32 minutes is perfect for my oven! Let cool for at least 45 minutes before cutting.
