Vanilla Protein Cashew Butter Stuffed Dates

ingredients:

  • 10-12 pitted medjool dates

  • 1/4 cup cashew butter

  • 1 tbsp vanilla protein

  • 1 tsp vanilla

  • 1 tsp maple syrup 

  • optional: chocolate drizzle & sprinkle of fancy sea salt*

Directions:

  1. Line a small baking sheet with parchment paper. Slice dates halfway through, lengthwise, and remove pits if needed.

  2. In a small bowl, mix together cashew butter, vanilla protein powder, vanilla extract and maple syrup.

  3. Fill each date with ~2 tsp cashew butter filling.

  4. *Optional chocolate drizzle: in a microwave safe bowl, in 30 second increments, melt ~1/4 cup dark chocolate chips and 2 tsp coconut oil. Drizzle over each date, sprinkle with fancy sea salt, and freeze until chocolate hardens. Store in fridge or freezer.
