Crustless Spinach, Sweet Potato & Goat Cheese Quiche

Crustless Spinach, Sweet Potato & Goat Cheese Quiche

Ingredients:

  • 1 tbsp olive oil, divided

  • 1 medium sweet potato, cut into 1/2” cubes

  • 3 oz spinach

  • 2 oz goat cheese, crumbled

  • 6 Vital Farms eggs

  • 1/3 Cup almond milk

  • 1/2 tsp dried dill, optional

  • 1/2 tsp dried chives, optional

  • 1/2 tsp salt

  • pepper, to taste

Directions:

  1. Preheat oven to 425 degrees F and grease a pie dish and a small baking sheet.

  2. Place sweet potatoes on prepared baking sheet, toss with 1/2 tbsp olive oil and a sprinkle of salt and pepper. Roast for 25 minutes or until easily pierced with a fork.

  3. Meanwhile, in a sauté pan over medium heat with 1/2 tbsp olive oil, cook spinach until wilted.

  4. In a medium size bowl, whisk together eggs, milk and seasonings.

  5. Place spinach, sweet potatoes, and goat cheese in prepared pie dish. Pour egg mixture over top.

  6. Turn the oven down to 350 degrees F, and bake for 35 minutes or until the eggs are set.
