Crustless Sausage, Spinach & Goat Cheese Quiche

Crustless Sausage, Spinach & Goat Cheese Quiche

Ingredients:

  • 1 tbsp olive oil

  • 14 oz. ground breakfast sausage (chicken or pork)

  • 3 cups spinach, or several large handfuls!

  • 10 eggs

  • 1/4 cup milk or choice

  • 2 oz goat cheese, crumbled & divided

  • salt & pepper, to taste

Directions:

  1. Preheat oven to 350 degrees F and grease a 9” pie plate.

  2. In a pan over medium heat, add oil and sausage. Cook until browned, breaking up into smaller pieces.

  3. While your sausage cooks, in a bowl, whisk eggs, almond milk, salt and pepper.

  4. Once sausage is cooked through, add spinach and stir until wilted. Add sausage/spinach mixture to prepared pie plate.

  5. Let sausage/spinach cool for a few minutes before adding most of your crumbled goat cheese and all of your egg mixture. Stir gently to combine. Top with the rest of the goat cheese.

  6. Bake for 35-40 minutes or until eggs are set in the middle. Let cool for at least 10 minutes before cutting.
