Crustless Sausage, Spinach, Sweet Potato & Goat Cheese Quiche

INGREDIENTS:

  • 1 tbsp olive oil

  • 1 lbs ground mild Italian chicken/pork sausage 

  • 3 oz spinach 

  • 1 medium sweet potato, cubed & roasted*

  • 2 1/2 oz goat cheese, crumbled 

  • 10 eggs

  • 1/4 cup milk of choice

  • salt & pepper, to taste

DIRECTIONS:

  1. Preheat oven to 350 degrees F and lightly grease a pie plate. 

  2. In a saute pan over medium heat, add olive oil and sausage. Brown, breaking up into smaller pieces until no pink remains.

  3. Stir in spinach until wilted.

  4. In a bowl, whisk together eggs, milk, salt and pepper. 

  5. Add roasted sweet potatoes and sausage/spinach mixture to the prepared pie plate. 

  6. Top with half of the goat cheese and whisked eggs.

  7. Stir until evenly distributed. Top with remaining goat cheese.

  8. Bake for 35-40 minutes or until eggs are set.

*I roast my cubed sweet potatoes with olive oil, salt, pepper and a no-salt seasoning like Trader Joe’s 21 Seasoning Salute at 425 degrees F for 30ish minutes.
