Vanilla Protein Blueberry Muffins

Ingredients:

  • 1 Cup peanut butter

  • 1/2 cup maple syrup

  • 1/4 cup unsweetened applesauce 

  • 1 1/2 tsp vanilla extract

  • 2 eggs

  • 2 scoops vanilla protein, I use Ancient Nutrition* 

  • 1 tbsp coconut flour

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • a few dashes of cinnamon, optional

  • 1 Cup blueberries, plus more for topping

Directions:

  1. lightly grease a 12 cup muffin pan and preheat the oven to 350 degrees F.

  2. In a medium size bowl, combine peanut butter, maple syrup, apple sauce, eggs and vanilla until smooth.

  3. add protein powder, coconut flour, baking soda, salt and cinnamon until well combined. gently stir in blueberries.

  4. Divide evenly among prepared muffin pan. Sprinkle each with a couple more blueberries. Bake for 20 minutes or until a toothpick inserted comes out clean.
