Pumpkin Protein Chocolate Chip Muffins

FROM MY RECIPE BOX: Pumpkin season is in full swing, and I wanted to jump on board! These Pumpkin Protein Chocolate Chip Muffins require 1 bowl, 20 minutes - including cooking & cleaning, and just a few ingredients. Happy Fall, y’all!

Pumpkin Protein Chocolate Chip Muffins

Ingredients*

  • 1 cup almond butter

  • 1/2 cup pumpkin puree

  • 1/4 maple syrup

  • 2 eggs

  • 1 1/2 scoops pumpkin protein powder (I use Ancient Nutrition)

  • 1/4 tsp salt

  • 1/2 tsp baking soda

  • 1/4-1/3 cup Dark chocolate chips (I like Enjoy Life)

Directions

  1. Preheat oven to 350 and grease a 12 cup muffin tin.

  2. Combine wet ingredients in a medium bowl.

  3. Add dry ingredients, except chocolate chips, and mix until just combined. Fold in chocolate chips.

  4. Pour batter evenly among the 12 cups and bake for 15 minutes or until a toothpick comes out clean.
