INGREDIENTS*

  • 1 CUP ALMOND BUTTER

  • 1/2 CUP PUMPKIN PUREE

  • 1/4 MAPLE SYRUP

  • 2 EGGS

  • 2 scoops chocolate PROTEIN POWDER, I USE ANCIENT NUTRITION**

  • 2 tbsp pumpkin spice

  • 1/2 TSP BAKING SODA

  • 1/4 TSP SALT

  • 1/4-1/3 CUP DARK CHOCOLATE CHIPS, I LIKE ENJOY LIFE, plus more for topping

DIRECTIONS

  1. PREHEAT OVEN TO 350 degrees F AND GREASE A 12 CUP MUFFIN TIN.

  2. COMBINE WET INGREDIENTS IN A MEDIUM BOWL.

  3. ADD DRY INGREDIENTS, EXCEPT CHOCOLATE CHIPS, AND MIX UNTIL well COMBINED. FOLD IN CHOCOLATE CHIPS.

  4. POUR BATTER EVENLY AMONG THE 12 CUPS, topping with extra chocolate chips if desired. BAKE FOR 15-18 MINUTES OR UNTIL A TOOTHPICK COMES OUT CLEAN.
