Chocolate Chip Pumpkin Tahini Bread

Ingredients:

  • 1 can pumpkin puree

  • 1/2 cup tahini 

  • 3/4 cup coconut sugar

  • 1 cup gluten free all purpose flour 

  • 2 tbsp pumpkin pie spice

  • 2 tsp baking powder

  • 1 tsp vanilla

  • 1/4 tsp salt

  • 1/3 cup dark chocolate chips, plus more for topping

Directions:

  1. Preheat oven to 350 degrees F and line a loaf pan with parchment paper.

  2. In a large bowl, combine all ingredients, except chocolate chips, until smooth.

  3. Fold in chocolate chips.

  4. Pour batter into prepared baking dish and top with more chocolate chips.

  5. Bake for 35-40 minutes or until a toothpick inserted in the middle comes out clean.
