Pumpkin Coconut Chia Pudding

Pumpkin Coconut Chia Pudding

Ingredients: 

  • 1 can full fat coconut milk

  • 1/2 cup pumpkin puree

  • 3 tbsp maple syrup, or more if you want it sweeter!

  • 3/4 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/8 tsp salt

  • 1/3 cup chia seeds

  • optional toppings: coconut, pecans, walnuts, more coconut milk, nut butter. extra cinnamon

Directions:

  1. Place all ingredients, except chia seeds, in a high speed blender and blend until smooth.

  2. Add chia seeds and blend until well combined (about 20 seconds). Let sit for 5 minutes then blend again for another 20 seconds.

  3. Transfer to a container and place in the refrigerator for 4+ hours before dividing into individual containers, I love Weck Jars, and adding your choice of toppings.
