Ingredients:

  • 1 15 oz. can black beans, drained and rinsed

  • 1/3 C oat flour (you can also add rolled oats to a blender to get a flour consistency)

  • 1 - 2 tbsp chipotle in adobe (depending on how smokey you want it!)

  • 1/2 C canned pumpkin puree

  • 2 tbsp chopped parsley and/or cilantro

  • 1/4 tsp + an extra pinch of salt

  • black pepper

  • 1 tbsp ghee, butter or oil, for cooking

Directions:

  1. Preheat oven to 350 degrees F. Place black beans on a baking sheet and let them dry out in the oven for 7-10 minutes).

  2. Once the beans have cooled, add them to a medium size bowl and mash with a fork.

  3. Add remaining ingredients and mix until well combined. Place the “dough” in the fridge for at least 20 minutes.

  4. Remove dough from the fridge and form into 4 patties.

  5. Heat a sauté pan on medium heat and add ghee, coating the pan. Add patties and cook for 4-5 minutes per side until the outside turns slightly brown and crispy. Enjoy!
