Almond Joy Stuffed Dates

ingredients:

for the dates:

  • 18 medjool dates

  • 1 tbsp Coconut oil, melted

  • 1/3 cup Almond butter 

  • 1/2 tsp almond extract 

  • 3 tbsp finely Shredded Coconut

  • Pinch of salt 

for the chocolate drizzle:

  • 1/2 cup dark chocolate chips

  • 1 tbsp coconut oil

  • 2 tbsp finely shredded coconut

Directions:

  1. Line A BAKING SHEET WITH PARCHMENT PAPER. SLICE DATES HALFWAY THROUGH LENGTH WISE, REMOVE THE PITS IF NEEDED, AND PLACE THE DATES ON THE PREPARED BAKING SHEET.

  2. In a small bowl, mix together coconut oil, almond butter, almond extract, shredded coconut and salt. Fill each date with ~ 1tsp of the almond butter mixture. Freeze for at least 10 minutes.

  3. WHILE THE DATES ARE IN THE FREEZER, PLACE CHOCOLATE CHIPS AND COCONUT OIl in a microwave safe bowl. MICROWAVE AT 30 SECOND INCREMENTS, STIRRING IN BETWEEN, UNTIL CHOCOLATE CHIPS ARE COMPLETELY MELTED (ABOUT 3 TIMES!).

  4. remove dates from THe freezer and PLACE COCONUT in a SMALL BOWL.

  5. drizzle dates with melted chocolate and IMMEDIATELY SPRINKLE with coconut. REPEAT UNTIL ALL DATES ARE COATED. FREEZE FOR 10+ MINUTEs. Store in the fridge or freezer.
