Lemon Parmesan Pasta with Sausage & Kale

Lemon Parmesan Pasta with Sausage & Kale

Ingredients:

  • 8 oz banza cavatappi, or other pasta of choice

  • 1/2 tbsp olive oil

  • 1 lbs ground mild Italian sausage, or cooked links cut in quarters & sautéed

  • 2-4 cups chopped kale

  • 3/4 cup parmesan, or more if desired

  • 3 tbsp lemon juice

  • 1/2 tsp garlic powder

  • salt & pepper, to taste

Directions:

  1. Cook pasta according to package directions. Reserve 1+ cup of pasta water when draining.

  2. While pasta is cooking, in a sauté pan over medium heat, add olive oil and sausage. Cook, breaking up into small pieces, until no pink remains. Add kale to the pan and continue stirring until wilted.

  3. To a bowl, add sausage/kale mixture, pasta, 1/2 cup parmesan, lemon juice, garlic powder, salt and pepper and toss to combine. Add 1/4-1/2 cup pasta water and stir until mixture starts to come together.

  4. Adjust seasoning and/or add more pasta water as needed. Top with remaining 1/4 cup parmesan before serving.
