Herby Lemon Orzo Pasta Salad with Feta

Herby Lemon Orzo Pasta Salad with Feta

Ingredients:

  • 1 1/2 cup orzo, dry

  • 1 bell pepper, diced

  • 1 cup cherry/grape tomatoes, halved

  • 1/2 large cucumber, seeded & quartered 

  • 4 oz feta, crumbled 

  • 2 tbsp mint, chopped

  • 2 tbsp dill, chopped

  • 1/4 cup parsley, chopped 

  • 3 tbsp lemon juice

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp oregano

  • 1 tsp salt

  • 1/2 tsp black pepper

DIRECTIONS:

  1. Cook orzo according to package directions, drain (saving pasta water!) and rinse.

  2. While the orzo is cooking, chop your veggies and add to a bowl with crumbled feta, herbs, lemon, spices, salt and pepper.

  3. Add orzo once cooled and 1/4-1/2 cup of reserved pasta water. Stir until the pasta comes together, adding more pasta water as needed.

  4. Taste and adjust seasoning as needed. Serve with more crumbled feta on top.
