Buffalo Chicken Pasta Salad

Buffalo Chicken Pasta Salad

ingredients:

  • 8 oz. pasta, I like banza chickpea pasta, save the pasta water!

  • 1 rotisserie chicken, shredded

  • 1 tbsp olive oil

  • 1 package of trader joes mirepoix (or 2 carrots, 2 stalks celery and 1/2 onion, diced)

  • 1 red bell pepper, diced

  • 1/3 cup buffalo sauce

  • 1/4 cup ranch, or more for a creamier, less spicy version

  • 3 tbsp greek yogurt, or more for a creamier, less spicy version

  • 2 tsp oregano 

  • 1/4 tsp garlic powder

  • 1/4 tsp salt

  • 1/4 tsp pepper

  • optional: 1/2 cup (or more) shredded cheddar cheese to top

Directions:

  1. Cook pasta according to package directions. Drain, saving pasta water.

  2. In a saute pan over medium heat. Add olive oil, and once hot, add mirepoix and diced bell pepper. Saute for 7-10 minutes or until veggies have softened.

  3. Add shredded chicken, buffalo sauce, ranch, yogurt, oregano, garlic powder, salt and pepper to the veggie mixture and stir to combine.

  4. Add pasta, 1/4 cup pasta water (or more as needed) and toss. Adjust seasonings to taste and top with shredded cheddar cheese.
