BLT Pasta Salad

BLT Pasta Salad

Ingredients:

  • 8 oz. chickpea pasta (or other pasta of choice)

  • 6-8 slices of bacon, cooked

  • 4 cups chopped romaine

  • 2 cups cherry tomatoes, halved

  • 1/4 cup greek yogurt

  • 1/2 cup ranch dressing

  • 1/2 tsp garlic powder

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • optional for serving: shredded cheddar cheese, extra ranch and more black pepper

Directions:

  1. Cook pasta according to package directions, saving ~1/2 cup pasta water.

  2. Add bacon, romaine, and tomatoes to a large bowl and toss to combine.

  3. Add the pasta back to the pot with half of the pasta water. Let the pasta cool before adding greek yogurt, ranch, garlic powder, salt and pepper. Stir until well combined. If the mixture seems too thick, add more pasta water.

  4. Add the pasta to the bowl with the bacon, romaine, and tomatoes, and toss until well combined. Taste and adjust seasoning as needed. Optional: add shredded cheddar, more ranch, and fresh ground black pepper before serving.
