Oatmeal Chocolate Chip Cookies

Oatmeal Chocolate Chip CookieS

Ingredients:

  • 3/4 Cup almond flour

  • 1/2 Cup oats

  • 1 Cup almond butter

  • 1/2 C maple syrup

  • Dash cinnamon 

  • 1 egg

  • 1 tsp baking soda

  • 1/4 cup chocolate chips, I like Enjoy Life minis

  • 3/4 Cup walnuts

  • salt, to sprinkle on top

Directions:

  1. In a medium size bowl, mix together the first 5 ingredients until well combined. Place in the fridge for 30 minutes.

  2. Preheat the oven to 350 degrees F and line 2 baking sheets with parchment paper.

  3. after 30 minutes, add the egg, baking soda, chocolate chips and walnuts and mix until well combined.

  4. Using a spoon or cookie scoop, roll dough into ~1.5 tbsp size balls and place on baking sheet, flattening them down and leaving about 2 inches between. I got 20 cookies.

  5. Sprinkle with salt. Bake for 9-11 minutes (depending on if you want gooey or crispy!) and enjoy!
