Green Chile Turkey Burritos with Spinach

Green Chile Turkey Burritos with Spinach

Ingredients:

  • 1/2 tbsp olive oil

  • 1 lbs ground turkey (or chicken)

  • 2 cups spinach

  • 10 oz. can tomatoes with green chiles

  • 1/2 cup shredded Mexican cheese, or more to taste

  • 5-6 large burrito size tortillas

  • salt & pepper, to taste

Directions:

  1. In a sauté pan over medium heat, add olive oil and ground turkey. Cook turkey, breaking up into smaller pieces, until no pink remain.

  2. Add spinach and continue stirring until wilted.

  3. Add canned tomatoes with green chiles (drain if they are really liquidy!) and continuing cooking for about 3 minutes or until some of the liquid is absorbed. Fold in cheese, salt and pepper.

  4. Once cooled, divide turkey mixture evenly among the tortillas - place the filling on one end of the tortilla, in a line. Fold in the ends of the tortilla and roll, continuing to fold in the ends as you go.

  5. Optional: toast the burritos seam side down in a pan lightly coated with olive oil/butter. Once golden, flip, and cook until that side is also golden.
