Buffalo Turkey Enchiladas with Spinach & Sweet Potatoes

BUFFALO TURKEY ENCHILADAS WITH SPINACH & SWEET POTATOES

INGREDIENTS:

  • 1/2 tbsp olive oil

  • 1 lbs ground turkey

  • 3 handfuls spinach, chopped

  • 1 medium sweet potato, cooked & mashed

  • 2/3 cup buffalo sauce, I like The New Primal*, plus more to drizzle on top

  • 1/3 cashew cheese, I like siete nacho cheese (or replace with shredded mexican cheese!)

  • 1 tsp cumin, optional

  • salt & pepper, to taste

  • 8 tortillas, I like siete almond flour

DIRECTIONS:

  1. Preheat oven to 400 degrees and lightly grease a 9X13 baking dish.

  2. In a saute pan over medium heat, add olive oil and brown ground turkey until no pink remains.

  3. Add the turkey to a large bowl and toss with spinach, sweet potato, buffalo sauce, cashew cheese, cumin, salt and pepper.

  4. Divide filling evenly among tortillas, roll up, and place seam-side down in prepared baking dish. If there’s leftover filling, you can spread it on top of the enchiladas.

  5. Drizzle with buffalo sauce and/or more cashew cheese.

  6. Bake for 22-25 minutes or until tortillas turn slightly golden.
