Almond Butter Chocolate Chip Cookies

Almond Butter Chocolate Chip Cookies

Ingredients:

  • 1 cup almond butter

  • 1 cup almond flour

  • 1/2 cup maple syrup

  • dash cinnamon

  • 1 egg

  • 1 tsp baking soda

  • 1/2 cup chocolate chips, I like Enjoy Life Mini’s

  • fancy salt, like maldon, for sprinkling on top

Directions:

  1. IN A MEDIUM SIZE BOWL, MIX TOGETHER THE FIRST 4 INGREDIENTS UNTIL WELL COMBINED. PLACE IN THE FRIDGE FOR 30 MINUTES.

  2. PREHEAT THE OVEN TO 350 DEGREES F AND LINE 2 BAKING SHEETS WITH PARCHMENT PAPER.

  3. AFTER 30 MINUTES, ADD THE EGG, BAKING SODA, CHOCOLATE CHIPS AND MIX UNTIL WELL COMBINED.

  4. USING A SPOON OR COOKIE SCOOP, ROLL DOUGH INTO ~1.5 TBSP SIZE BALLS AND PLACE ON BAKING SHEET, FLATTENING THEm DOWN AND LEAVING ABOUT 2 INCHES BETWEEN. I GOT 20 COOKIES.

  5. SPRINKLE WITH SALT. BAKE FOR 9-11 MINUTES (DEPENDING ON IF YOU WANT GOOEY OR CRISPY!) AND ENJOY!
