Chocolate Peppermint Protein Bars

Ingredients:

  • 18 pitted medjool dates 

  • 3/4 cup cashew butter

  • 1/3 cup chocolate collagen/protein powder, I like Ancient Nutrition

  • 1/3 cup cacao powder

  • 1/2 tsp peppermint extract

  • 3 tbsp mini chocolate chips, I like Enjoy Life Foods

  • 1 candy cane, crushed

  • fancy salt, like Maldon, for sprinkling on top 

DIRECTIONS:

  1. add dates to a food processor and blend for 10-15 seconds until broke up into smaller pieces.

  2. Add cashew butter, collagen cacao powder and peppermint. Blend again until well combined and slightly sticky. Stir in chocolate chips.

  3. Line a small pan, like a loaf pan or 5X7 baking dish, with parchment. Press mixture into pan, using another piece of parchment on top if necessary.

  4. Sprinkle with crushed candy canes and a sprinkle of salt and press down into the bars.

  5. Freeze for at least 30 minutes before cutting into squares or bars. Store in the fridge or freezer.
