Toasted Coconut Energy Bites

From my recipe box: these 2 ingredient toasted coconut energy bites are heavily adapted from Eating Bird Food’s samoa recipe…so basically like a samoa without the chocolate!

Toasted Coconut Energy Bites

Ingredients

  • 1 C pitted medjool dates, roughly 8 dates

  • 1 C unsweetened shredded coconut

Directions

  1. HEAT THE OVEN TO 350 F. LINE A SMALL BAKING SHEET WITH PARCHMENT PAPER AND TOAST COCONUT FOR 8-10 MINUTES BEING CAREFUL NOT TO BURN.

  1. PULSE DATES IN A FOOD PROCESSOR FOR 10-20 SECONDS UNTIL THEY’RE BROKEN UP INTO SMALLER PIECES. ADD REMAINING coconut and blend until well combined.

  2. Roll into 1 inch balls and store in the fridge or freezer for a grab-n-go sweet treat!
