Toasted Coconut CBD Bites

Toasted Coconut CBD Bites


  • 14 pitted medjool dates

  • 2 1/2 C unsweetened shredded coconut

  • 5 TBSP coconut flour

  • pinch of salt, plus more for sprinkling on top

  • 1/2 tsp vanilla extract

  • 3ML Hemp Extract [I used a 37.5mg dropper (0.75ML per dropper) for a total of 150mg in the entire recipe]*


  1. heat the oven to 350 degrees F. Line a small baking sheet with parchment paper and toast coconut for 6-8 minutes, being careful not to burn.

  2. Pulse dates in a food processor for 10-20 seconds until they’re broken up into smaller pieces. Add remaining ingredients except for CBD and vanilla. blend until well combined.

  3. Add CBD and vanilla and blend until the mixture starts to come together. The mixture should be slightly tacky. If it’s too oily add more coconut or coconut flour.

  4. Line a small baking dish, I used 9X5, with parchment paper and press mixture firmly into the dish. YOu might need to place another piece of parchment on top and really put some elbow grease into it! SPrinkle with Salt.

  5. Freeze for at least 1 hour before cutting into ~1 inch squares [makes roughly 16 bites]. I store these in the freezer for a quick after dinner sweet treat that helps me with sleep!

* If cut into 16 bites, each bite would contribute ~9g CBD.

*If you don’t have hemp extract/CBD oil you can replace this with 1-2 tbsp melted coconut oil. Start with 1 and add more as necessary.
