No-Bake Crunchy Peanut Butter Cheerio Bars

NO-BAKE CRUNCHY PEANUT BUTTER CHEERIO BARS

INGREDIENTS

  • 2 C rolled/old fashioned oats

  • 2 C Plain cheerios [I used Trader Joe’s Joe’s O’s]

  • 1 C peanut butter [could sub almond butter]

  • 1/2 C honey/maple syrup/agave

  • 1 tsp cinnamon

  • 1 tsp vanilla

DIRECTIONS

  1. In a large bowl, mix all of the dry ingredients.

  2. Melt sweetener of choice with peanut butter in the microwave for ~30 seconds until you’re able to stir it together. Add vanilla and mix well.

  3. Combine wet ingredients with dry until well combined. Add more peanut butter/sweetener if it doesn’t seem to be sticking together.

  4. Line a small baking dish [I used 8 X 5] with parchment and spread the mixture out evenly. Use some elbow grease to really press down the mixture into the dish [using more parchment paper on top if necessary].

  5. Freeze for at least 30 minutes before cutting. I stored mine in the freezer!
