Maple Dijon Salmon

Soaking up the last little bit of summer with this sweet Maple Dijon Wild Caught Salmon (can you believe it's almost September?!). This pairs really well with my Creamy Avocado Zoodles for a light and fresh twist or it could easily be added to any salad or combined with a grain and some other veggies. Could it get any easier? 4 ingredients, 15 minutes, and 1 dirty dish.

Costco sells their Wild Caught Sockeye Salmon for a short time, and I love when I can 'catch' it! I recommend purchasing wild caught fish vs. farm raised, when possible. Farmed fish are often fed fish meal and treated with antibiotics, and you're likely to consume more toxic chemicals and other contaminants from this variety of fish compared to their wild caught counterparts. That being said, I realize that wild caught isn't always an option, so if you have to go farm raised every now and again, don't sweat it.

Here are a few neat tools to help you select seafood: 1) The Environmental Defense Fund's seafood selector ranks seafood according to their eco-friendliness, mercury levels, and omega 3 fatty acid content so you can see how you're typical choices stack up. 2) The Environmental Working Group's consumer seafood calculator gives personalized recommendations for how much of certain types of fish to consume per week. 3.) The Monterey Bay Aquarium Seafood Watch identifies environmentally friendly seafood choices.

Now, the fun stuff...

Maple dijion wild caught salmon

INGREDIENTS:

  • 1-1.5 lbs. wild caught salmon

  • 2 tbsp dijion mustard, or stone ground for a less spicy version!

  • 3 tbsp maple syrup

  • 1/4 tsp garlic powder

  • 1/4 tsp salt, plus more for seasoning salmon

  • 1/4 tsp black pepper, plus more for seasoning salmon

DIRECTIONS:

  1. Preheat oven to 400 degrees and line a large baking sheet with parchment paper.

  2. Pat salmon dry, and place skin side down on the parchment paper. Season with salt and pepper.

  3. Whisk mustard, maple syrup, garlic powder salt and pepper in a small bowl and spread about half of it evenly over the salmon using a spoon or brush.

  4. Bake for ~11 minutes or until cooked through. Drizzle with remaining maple mustard sauce and serve.
