Herby Quinoa, Cucumber & Feta Salad

Herby Quinoa, Cucumber & Feta Salad

Ingredients:

  • 2 cups chicken or veg broth, optional

  • 1 cup dry quinoa

  • 1 large cucumber, seeded & quartered

  • 6 oz crumbled feta

  • 1 -15 oz can chickpeas, drained & rinsed

  • 1 1/2 lemons, juiced, plus more for serving

  • 1/2 cup chopped parsley

  • 1/3 cup chopped mint

  • 1/3 cup pistachios 

  • 1/2 tsp salt, or to taste

  • 1/2 tsp black pepper, or to taste

Directions:

  1. Cook quinoa according to package directions using chicken/vegetable broth instead of water to add more flavor (optional). Let cool.

  2. To a large bowl, add cucumber, feta, chickpeas, lemon juice, parsley, mint, salt and pepper.

  3. Once quinoa has cooled, add it to the bowl and stir until well combined.

  4. Fold in pistachios and serve with extra lemon.
