Brussels Sprout Caesar Tortellini with Crispy Chickpeas

Brussels Sprout Caesar Tortellini with Crispy Chickpeas

Ingredients:

  • 1 tbsp olive oil

  • 10 oz shaved brussels sprouts

  • 9 oz tortellini, I like Kite Hill (save the pasta water)

  • 1/3 cup caesar dressing, I like Tessamae’s

  • 1/4 - 1/2 cup parmesan

  • 1/2 tsp garlic powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • optional: crispy chickpeas, like Biena Snacks, to top


Directions:

  1. In a saute pan over medium heat, add olive oil and brussels sprouts. Stir occasionally until tender, about 8 minutes (I add water every few minutes to get the brussels sprouts to soften without burning them!). Add garlic powder, salt and pepper. Transfer to a large bowl.

  2. While the brussels sprouts are cooking, prepare tortellini according to package directions. Save the pasta water.

  3. Add tortellini to the bowl with the brussels sprouts along with ~1/4 cup of pasta water, caesar dressing and parmesan. Stir to combine. Add more pasta water as needed to get the mixture to come together.

  4. Top with more black pepper, parmesan and crispy chickpeas if desired.
