No-Bean Bison Chili

From My Recipe Box: I love beans - by themselves in soups, chilis, and other dishes - but they don’t agree with some people, or if you’re following the Whole30 or Paleo diet, they may be off limits. However, this No-Bean Bison Chili isn’t only for the bean-avoiders! If you like beans like me, feel free to add them in during step 3 and up the stock a little bit! Swap out bison for ground beef or turkey if you prefer.

Ingredients:

  • 1 tbsp olive oil

  • 1/2 onion, diced

  • 3 carrots, peeled & diced

  • 2 stalks celery, diced

  • 1 tbsp minced garlic

  • 1 1/2 tbsp chili powder

  • 1/2 tbsp paprika

  • 1/2 tbsp cumin

  • 1 1/4 lbs ground bison (sub ground beef or turkey)

  • 2 - 14.5 oz. cans diced fire roasted tomatoes w/ green chiles*

  • 1/4-1/2 cup chicken stock (depending on desired thickness)

  • salt, to taste

  • optional toppings: cilantro, sour cream, greek yogurt, shredded cheddar, avocado

Directions:

  1. In a large pot, heat olive oil over medium heat. Add onion, carrot and celery and sauté until onion is translucent and veggies start to get tender. Add garlic and stir for 1 minute. Add spices and stir for 30 seconds.

  2. Add bison, breaking up into smaller pieces, until cooked through.

  3. Add remaining ingredients, stir, reduce heat to low, and put the top on for 20 minutes.

  4. Taste and adjust seasoning as desired. Serve with cilantro, sour cream, greek yogurt, shredded cheddar, avocado, or whatever your heart desires!

*if you don’t like the fire roasted/spicy flavor, sub out 1 can for tomato sauce or regular can diced tomatoes
